The Coenobium Rusticum is a white wine from the trappist monks of Vitorchiano.
It is made out of a mix of grapes:
- Trebbiano (55%)
- Verdicchio (15%)
- Malvasia (20%)
- Grechetto (10%).
This wine has the peculiarity of being left fermenting for 15 days still with the peel, moreover it is not filtered.
The grapes are grown in the fields of the monastery using natural methods, without the use of synthetic chemicals.
